Today I visited with my oldest daughter and my awesome grandson. He's so precious. I love it when he calls me Nammy. I'm actually supposed to be Grammy but oh well. I'll take it. :)
Anyway, it was time for me to leave and I knew I needed to stop by Kroger to get something to fix for supper. I just didn't know what to fix. Nothing sounded good. So, Hannah suggested I get a rotisserie chicken and some flour tortillas to make chicken tacos. Hmmm. Sounds good. So, I went to the store and bought two chickens (I'm feeding 8 people tonight so I figured I might need two) and fresh flour tortillas.
I have now shredded the chicken. I will warm up the awesome pinto beans we had the other night so we will have a side dish. I already have lettuce and sour cream. Sounds yummy, huh?
One thing I decided to do after I was deboning the chicken was to make a stock from the bones so I saved them and will work on that tomorrow. Tonight I'm going to help my hubby with a project at church so I don't have time to cook it tonight. We'll see how that works. Hope it's not a waste.

Fresh Green Beans
I am in a veggie co-op and I received some fresh green beans almost 2 weeks ago, so not really as fresh as they could be, but they aren't canned so we'll go with *fresh*. :)
I have never made fresh green beans but I did tonight and this is what I did.
I snapped the ends off of the beans. Got a pot of salted water boiling and added them for 6 minutes. The recipe I was following said 5 minutes but I didn't think it was boiling good enough so I added an extra minute. :) Then, I poured them into a colander and rinsed with cold water. While the beans were boiling, I got a saucepan out and put 3 TB butter and about 1/2 TB of refrigerated minced garlic in the pan. I sauteed that about a minute then added the beans. I cooked these until they were tender enough for us and only added salt, pepper and a little garlic powder. Yum. :)

Food...
you either love it or hate it. Currently, I'm in the "I hate beef" mode. It might have to do with a possible case of food poisoning last night. See, I asked Tom to bring me home a Whataburger, which he gladly did. I had a burger with mayo all the way, non-salted fries, and powerade around 7 p.m. By ten, it felt like I had a bowling ball sitting on my diaphragm. It hurt from there all the way between my shoulder blades. My heart was acting up and I just knew it was a gas bubble and would go away soon. Fast forward to 3 a.m. and it's still bothering me. I can't sleep well. I end up making myself get rid of that burger and once it's all out of my system, I finally feel normal again. Now I'm just running on a little sleep and could use a nap. I think it was food poisoning because Tom had the same food (burger with mustard, same fries, and a lemonade) and he felt sick to his stomach but his only lasted an hour or less. Can we say, "No fair"!? At any rate, beef is not my friend at the moment.

uh oh already!!
So, Beth and Wes gutted a pumpkin today and I roasted the seeds. Everyone EXCEPT Courtney ate them. She refused. She said she has 10 days to go before she has to eat healthy so she's not starting now. Come on Court!! It's just a little punkin seed. ;) It's yummy. :)
