Sun-Dried Tomatoes & Salsa

I made some yummy sun-dried tomatoes tonight and they are awesome! I had a case of romas that needed to be cooked so I made them into these and also made some salsa. Tomorrow I need to see what I'm going to put them into. Pasta would be good but I can't have pasta yet so maybe it will be good with Quinoa. Excited to find out. :
